Skinny Cakes

Do you know the muffin man,
What muffin man?
That muffin man!
Yes, I know the muffin man,
The one with fatty cakes?

If I ate from that man’s pan,
A pastry grand
with spiced pecan,
Tasting the wares of the muffin man
Would give me a tummy ache.

I have gastroparesis which means I must strictly limit my fat intake else suffer the consequences! Have you ever searched for fat free bakes goods? They aren’t out there. Trying will result in keto, vegan, and low sugar recipes… not the same thing at all.

Evidently, not many people have the severe fat restrictions that I and select others have. Regardless, I don’t think anyone who is trying to have a healthy lifestyle will turn up their nose at a yummy fat free breakfast option. So it is through much trial and error I bequeath you this recipe:

Fat Free Frutti-Tutti Muffins

It is highly recommended to listen to Little Richard whilst baking.

Ingredients

Wet:

1/2 cup Applesauce
1/4 cup Egg Whites
1/4 cup Fruity Tea {boldly steeped}
The zest of 1/2 lemon or orange

Dry:

1 cup Flour of Choice
2 Tbs Sugar {or Honey to the wet ingredients}
1 tsp Baking Soda
1/4 tsp Salt
1/2 cup Dried Fruit {or other fruity bits of choice}

Directions:

Preheat oven to 350 Fahrenheit. Mix separately. Add dry to wet and do not overmix. Plop into regular sized muffin tins with liners or nonstick spray. Grace the tops with sprinkles, they are the smiles of the food world. Bake 12-15 minutes.

Yields 8 Regular-Sized Muffins

{Color of muffins will vary depending on the type of tea used. I made mine with white peach tea, lemon zest, and cranberries.}

There you are! Super easy, quick to make, and healthy for you.

Tea may seem a strange thing to put in a muffin recipe, but they make these suckers pop with flavor, which is important in the absence of butter. I gave one to Lynn {I don’t usually because he may have any fat-filled fancy he desires}, and his immediate response was, “I could eat a dozen of these!”

Muffins make mornings marvelous. And that is all I have to say about that.
